Creamy Garlic Pasta

Ingredients
1 (1 lb) box pasta, cooked as directed, drained and kept hot
2 tablespoons butter or margarine
4 garlic cloves roasted
2 tablespoons flour
1 1/2 tps chicken bouillon
3/4 cup water
3/4 cup milk
2 teaspoons parsley flakes
salt and pepper, to taste
1/3 cup grated parmesan cheese

Directions

  • Melt butter and add garlic in a medium sauce pan.
  • Cook over medium for 1 minute.
  • Add flour and cook 1 minute, stirring constantly.
  • Stir in broth and milk and cook, stirring frequently, until sauce boils and thickens.
  • Add parsley, salt, pepper and cheese.
  • Stir until cheese is melted.
  • Toss hot pasta with sauce and serve immediately.

Trash Can Spiral Omelet

I can’t brag about this enough! YUMMMY!!

Ingredients:
6 sliced fresh mushrooms
1/4 fresh bell pepper chopped
1/4 fresh onion chopped
3 small cloves garlic chopped
1/2 cup chopped cooked ham (lunch meat)
1/2 cup chopped cooked chicken (lunch meat)
2 oz cream cheese
1 TBS flour
3/8 cup milk
3 TBS grated parmesan cheese
6 eggs
2 TBS margarine
8 oz grated mixed cheese blend
Salt
Pepper

Instructions:
Line the bottom and sides of a greased 15 inch X 10 inch and 1 inch deep jelly roll pan with parchment paper, grease the paper and set aside.

In a mixing bowl (I used my Kitchen Aid mixer it works like a dream on this) add room temperature cream cheese and milk blend together until smooth. Beat in parmesan cheese and flour until blended smooth, then beat in eggs and mix well. Pour mixture in prepared pan.

Bake on 375 for 20 mins. Meanwhile, in a large skillet, sauté peppers, onion and garlic for about 5 mins or until tender, and then add mushrooms, chicken, ham and sauté all together for about another 5 mins. Keep warm.

Once cooked turn omelet onto a work surface, peel off parchment paper and return omelet to the jelly roll pan. Sprinkle with cheese, then vegetable /meat mixture and give it a few extra shakes of parmesan cheese salt and pepper to taste. If needed add back to the oven to melt cheese. Once cheese is melted roll up the omelet jelly roll style, starting with a short side. Slice to serve… Enjoy!

New Recipe for Burger Buns

Hamburger Rolls/ Dinner Rolls

I gave these a try today because I forgot I didn’t have cooking oil to make my normal recipe. These are actually dinner rolls, I just made them larger for hamburgers! They turned out great! PS don’t forget the sugar like I did! In truth it didn’t make a difference. So if you are trying to cut sugar out… you can with this recipe and it won’t change the way they turn out!

Ingredients:
1 cup Water
2 tablespoons margarine or butter, softened
1 egg
3 1/4 cups bread flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons yeast

Directions:
Place all dough ingredient in bread machine pan in order listed. Select Sweet dough cycle. Grease a cookie sheet. Divide dough into 15 pieces. shape each into a ball. place 2 inches apart on cookie sheet. Brush with margarine. Cover, let rise 30 to 40 minutes or until double. Heat oven to 375 degrees. Bake 12 to 15 minutes Brush tops with margarine if desired.

Italian Rice Balls

This is a great way to use up leftover rice.  It’s very important that you use leftover or rice that has had time to cool down. If you do not use leftover rice the recipe will not work correctly.
I have tried to use both fresh and older rice and the fresh rice never comes out right. There is something about the starch and the cooled rice that helps the balls keep their shape. If you are using warm fresh rice the balls will fall apart as they are cooking. Believe me it’s not worth the big mess (huge mess) if you don’t have older rice then don’t make this recipe. You will thank me for this information.
I love this recipe! It’s fun and delicious. No one is ever expecting to find rice in the balls. It’s also a great vegetarian appetizer or side dish if you are in need of one. You can use brown rice but I am afraid it might be a little too course to make the balls but it might be worth a try if you have extra brown rice.
I love to eat these balls but not necessarily make them. They are a bit of a pain, but they are worth the reward in the end!
Ingredients:
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon dried parsley
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 quart water
  • 1 teaspoon salt
  • 1 cup uncooked white rice
  • 1 1/2 cups dried bread crumbs (occasionally I use Italian bread crumbs)
  • 2 cups olive oil
Directions:
  1. In a medium bowl, whisk together eggs, cheese, parsley, pepper, and 1 teaspoon salt. Cover and refrigerate.
  2. Pour water and 1 teaspoon salt into a large saucepan and bring to a boil. Stir in rice and reduce heat to low. Cook rice until water is almost absorbed, stirring frequently. Remove from heat and slowly pour in egg mixture, stirring rapidly to prevent egg from scrambling. Allow rice mixture to cool for 1 hour. This process works best with older rice that you have as a leftover.
  3. Pour bread crumbs into a pile on one end of a cutting board. Dampen hands and roll rice mixture into 1 inch balls, then coat each one with bread crumbs.
  4. In a small, deep skillet, heat olive oil to 350 degrees F (175 degrees C). (Should have enough oil to completely cover rice balls.) Fry rice balls 6 at a time, turning as needed to ensure even browning. Drain on paper towels and serve warm.

Lasagna Rolls
I made this dish a few days ago, and I have to say it’s easier than the recipe looks, but a little bland. If I make it again I would spruce it up with some minced garlic, onion, bell pepper all sauteed then I would probably add some ground beef to it too. It could also use some Italian seasonings! I know you are thinking right now ..Why would you make this again, but I think it has potential it just needs a little help! Oh yeah and making the bechamel sauce can be a pain in the a$$ because it gets lumpy. If that happens to you put the sauce through the blender! That will work like a charm!

Ingredients
Sauce:
2 tablespoons unsalted butter
4 teaspoons all-purpose flour
1 1/4 cups whole milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Pinch ground nutmeg
Lasagna:
1 (15-ounce) container whole milk ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
1 cup plus 2 tablespoons grated Parmesan
3 ounces thinly sliced prosciutto, chopped
1 large egg, beaten to blend
3/4 teaspoon salt, plus more for salting water
1/2 teaspoon freshly ground black pepper
1 to 2 tablespoons olive oil
12 uncooked lasagna noodles
2 cups marinara sauce
1 cup shredded mozzarella (about 4 ounces)

Directions
To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
Preheat the oven to 450 degrees F.

Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.

Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.

Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread about 3 tablespoons of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamelsauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls.

Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.
